Tan cuisine is prepared mainly by braising, stewing, simmering and steaming, and its advantage lies in assorted seafood cooked in savoury soup stock. Beijing No. 1 is helmed by Executive Chef Shi Wei Dong, who has over 40 years of experience in the Chinese culinary world.
