Veteran and pioneer chef of RISE since 2010, Chef Chan’s traditional Pork Rib Prawn Noodle Soup is simmered over low heat for five hours to retain the natural sweetness of fresh ingredients.

Created out of his six-year-old son’s love for fried chicken, Chef Danny’s Har Cheong Gai uses a whole spring chicken for an extra juicy and tender result.

Claiming to have tried most of the Hokkien Mee stalls in Singapore, Chef Lian presents his rendition of his favourite local dish. His secret is an umami-laden stock made with a house-made red chilli blend and simmered for over eight hours.

Chef Adam’s take on Nasi Lemak is rooted in his Malay heritage. But he puts a spin in his rice by infusing it with coconut milk and freshly squeezed pandan juice to give it a beautiful pale green hue, and a lavish side of sambal onion prawns and a sweet pineapple relish that completes the dish.

We were especially impressed with Chef Adam’s Nasi Lemak and Chef Bharat’s Lamb Shank Nasi Biryani.
