Veteran and pioneer chef of RISE since 2010, Chef Chan’s traditional Pork Rib Prawn Noodle Soup is simmered over low heat for five hours to retain the natural sweetness of fresh ingredients.

Senior Sous Chef

Created out of his six-year-old son’s love for fried chicken, Chef Danny’s Har Cheong Gai uses a whole spring chicken for an extra juicy and tender result.

Chef Stella’s Chinese Rojak is a nostalgic rendition of her grandmother’s recipe. For extra texture, she added jambu to the mix of vegetables and fruits, which are then tossed in rojak sauce and her grandmother’s secret chilli padi blend.

Chef Bharat fondly reminisces the aroma of his mother’s Nasi Biryani wafting through his home. Adapting from her recipe, Chef Bharat elevated the dish with a whole lamb shank, braised to tender perfection.

Claiming to have tried most of the Hokkien Mee stalls in Singapore, Chef Lian presents his rendition of his favourite local dish. His secret is an umami-laden stock made with a house-made red chilli blend and simmered for over eight hours.

Chef Adam’s take on Nasi Lemak is rooted in his Malay heritage. But he puts a spin in his rice by infusing it with coconut milk and freshly squeezed pandan juice to give it a beautiful pale green hue, and a lavish side of sambal onion prawns and a sweet pineapple relish that completes the dish.

Growing up in a kampung, Chef Pang often helped to harvest sweet potatoes while his mother would make his favourite Bubur Cha Cha. Adapting from her recipe, Chef Pang uses three types of sweet potatoes to transform his childhood dessert into a colourful treat.

RISE presents Singapore’s most iconic delights with authentic home recipes and elevated local favourites reinvented by seven local culinary stalwarts. We were especially impressed with Chef Adam’s Nasi Lemak and Chef Bharat’s Lamb Shank Nasi Biryani. Families can share a nourishing bowl of Double Boiled Kampong Chicken Soup, available on the family-style set menus.

Delight in creative drinks such as the Cincau Sago, Cendol Colada, or hark back to classics like the Singapore Sling. Adventure seekers can try the Sambal Mary, a spicy vodka-based cocktail spiked with sambal belacan, tomato juice, and served with a side of fried anchovies and peanuts.
