What to Expect When Mott 32 Opens at Marina Bay Sands

Hong Kong’s famed restaurant is set to elevate contemporary Chinese fare when it opens at Marina Bay Sands later this year.  Here’s what to expect. 

Historic roots


When New York welcomed its first Chinese convenience store on 32 Mott Street in 1891, it planted the seed that would soon spawn the birth of a vibrant Chinatown – the epicentre from which life spilled; a buzzing hubbub of immigrants hawking cigars and plying their wares in what is today known as the Old Chinatown of Manhattan.

Thus was the inspiration behind the name Mott 32, Hong Kong’s famed mod-Chinese restaurant whose long list of accolades includes one for 100 Top Tables 2018 (South China Morning Post), and another for Hong Kong’s Best Fine Dining Restaurants (BILLIONAIRE magazine).


The restaurant’s impending, virgin foray into Singapore later this year – a partnership between Marina Bay Sands and restaurant group Maximal Concepts – will mark its fifth international outpost, after locations in Hong Kong, Vancouver, Seoul and Las Vegas.

Food, glorious food


Lee Man-Sing, Maximal Concepts’ Group Executive Chef who held two Michelin stars in his previous role at Mandarin Oriental, Hong Kong, will helm the kitchen – bringing with him over 35 years of culinary experience in Cantonese, Sze Chuan and Beijing cuisine, in themselves built on umami, spices and citrus.

These flavour profiles, captured so exquisitely in Mott 32’s signature dishes, get starring roles in the Apple Wood-roasted Peking Duck, Barbecue Pluma Iberico Pork glazed with yellow mountain honey, Smoked Black Cod, and Crispy Triple-cooked Wagyu Beef Short Ribs.

The Peking Duck, for one, is a consistent sell-out that's carved in the style of the traditional, so-named 'royal cut'. It's then served alongside freshly steamed pancakes, cucumbers and scallions, fresh garlic sauce, raw cane sugar, and a moreish, house-made hoisin sauce.

If it all sounds delectable, then these pictures would hardly do them justice – yet it’s all but a waiting game, at this point. 

Elixirs and spiked teas


As an accompaniment (and complement) to the restaurant’s best dishes, an indulgent mixology programme with Cantonese influences will also be on offer.

Joe’s Elixir is a heady yet bittersweet concoction of gin, chartreuse, blackberries, passionfruit and ginseng, while On Leong Tea is a bold spin on osmanthus and oolong tea – one that’s spiked with Denizen Rum and softened with notes of passionfruit and guava.

Garden city


In a homage to Singapore’s geographical and cultural proximity to Hong Kong – and the two cities’ shared history – Mott 32 at Marina Bay Sands will feature elements of the metropolis’ most iconic motifs, with verdant foliage and flora brought to life against a chinoiserie backdrop.

While we ready ourselves for the iconic restaurant’s opening in Singapore, there’re plenty of things to do around Marina Bay, whatever your poison: a spot of dim sum, imbibing half-price drinks al fresco at the integrated resort’s slew of waterfront bars, or catching Spectra, the free nightly light and water show fronting the Event Plaza.
