“We brine the chicken for 27 hours and then we simply dust it in our proprietary flour,” Executive Chef Leonard Delgado explains, “the trick is, though, that we use pressure fryers. We fry it under extreme pressure for two-thirds of the way. And then when it’s done, we release the pressure, we raise the heat, and we give it that nice, crisp texture on the outside. And it’s absolutely amazing.”
